Brief description of the product: Quince dessert.

Description of the processing and maturing methods: Remove the peel and core from the quince apples; cook them with water then pass them through a sieve. Mix the sugar of the same weight as the quince apples and pour into special molds to dry.

Specific materials and equipment used for preparation and conditioning: Pot, wooden spoon, openable round molds.

Description of the processing, storage and maturing rooms: Private houses.
