Brief description of the product: Large snails cooked in broth.
Description of the processing and maturing methods: Wash the snails for a long time after leaving them to drain for 24 hours in a well-covered basket, put them in a pot with water and cook for a couple of hours.
Specific materials and equipment used for preparation and conditioning: Basket with lid and pot.
Description of the processing, storage and maturing rooms: Rooms usually used as a kitchen.
