Area of ​​production: All of Sicily.

Brief description of the product: Oven product, spherical in shape, the size of a pizza, with various types of fillings. The most common are with tuma and anchovies and the one with broccoli.

Description of the processing and maturing methods: Ingredients for the dough: fine flour, durum wheat flour, natural yeast dough, a spoonful of sugar, lard.

For the filling: tuma cheese and salted anchovies for the scacciata con la tuma; broccoli, salted anchovies and spring onions for the broccoli.

Preparation: mix the two types of flour with natural yeast, sugar, a pinch of salt and a little warm water, and prepare a rather soft and homogeneous dough. Put it to rise in a warm place for a couple of hours, then add the remaining lard and make two very thin sheets of which one is larger than the other. Place the larger one on a greased baking tray so that it transshields by a couple of cm. Place, on top, the tuma cut into slices and the anchovies into small pieces, then cover it with the other sheet and tuck the dough around the edge to close it. Make holes here and there and put in the oven at high temperature. After about ten minutes, take it out of the oven, brush the surface with a little melted lard and put it back in the oven until it is colored. Serve hot.
