Area of ​​production: All of Sicily.

Brief description of the product: Very hard sweet made with honey.

Description of the processing and maturing methods: Ingredients: honey, citron and orange peel, almonds and sugared almonds, cinnamon. Preparation: put the honey, the citron and orange peels in a saucepan and cook until they have softened. Then add the chopped almonds, sugared almonds and cinnamon. Mix and pour the mixture onto a marble slab, greased with oil.

Leave to cool and cut into pieces.

Specific materials and equipment used for preparation and conditioning: No specific equipment.

Description of the processing, storage and maturing rooms: Pastry workshops and domestic environments.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: Petrafennula is a sweet of Arab origin that is traditionally prepared for the feast of the Immaculate Conception on December 8th.
