ingredients:

4 slices of swordfish
300 gr. of ripe tomatoes
25 gr. of pine nuts
1 onion
2 tablespoons of capers
1 clove of garlic
50 gr. of pitted olives
parsley
extra virgin olive oil
salt and pepper.

Peel the tomatoes (for this operation it is advisable to blanch the tomatoes for about 1 minute in boiling water and then pass them under cold water), remove the seeds and cut the pulp into cubes.

In a pan, heat the oil and brown the crushed garlic and thinly sliced ​​onion. Add the capers, pine nuts, olives and tomatoes.

Cover and cook for 15/20 minutes.

In the meantime, salt and pepper the fish, then place it in an oiled baking pan, pour the prepared sauce over it and add the chopped parsley. Bake at 180 degrees for 15/20 minutes.
