Royal Paste
Ingredients
500 gr. of sweet almond flour
500 gr. of sugar
a glass of water
Pasta Reale is a very sweet almond paste widely used in Sicily. The dough was so called because it was worthy of a king: in this case Roger II of Sicily.
Many Sicilian desserts are made with pasta reale, including i martorana fruits and the casing of the cassata
Preparation of the royal pasta:
To prepare the glaze, put the water and sugar in a pan, stir with a wooden spoon and bring to a boil, removing from the heat as soon as the sugar melts. (to understand when the sugar is spinning, use the ladle and drain a few drops of melted sugar, if the dripping drop will stretch gradually then it's okay).
Pour the glaze over the almond flour, mixing well with a wooden spoon. Wait for the mixture to become lukewarm and then you can give the mixture the shape you want.
