Brief description of the product: Ingredients for 4 people: 500 gr. of bucatini, 500 gr. of sardines already cleaned, 250 gr. of wild mountain fennel, 10 gr. of raisins, 10 gr. of pine nuts, 1 tablespoon of extra virgin olive oil, 30 gr. onion, 50 gr. of tomato extract, 150 gr. of bread crumbs.

Description of the processing and maturing methods: Fry the onion in olive oil and dissolve the tomato extract with the addition of water, add the previously blanched fennel, the sardines already cleaned, washed and chopped, the pine nuts and raisins. Add salt and pepper and cook for about 10 minutes. Toast the breadcrumbs in a pan with sugar and a drop of oil. Cook the pasta, drain and season with the previous preparation, adding the toasted breadcrumbs on top.

Description of the processing, storage and maturing rooms: Rooms usually used as a kitchen.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: Since 1915 this recipe was prepared in a typical Bagheria restaurant “Zza Maria cu trasi s'arricria”.
