Brief description of the product: Soft cheese that must be eaten fresh. The mozzarella that is produced in Giardinello has gained a good reputation thanks above all to the Provenzano dairy that distributes it in several Sicilian cities.
Description of the processing and maturing methods: The production of mozzarella in Giardinello today has an industrial level but its taste and its goodness are the same as always because they are due to the goodness of the milk and the skill of those who produce it.
Specific materials and equipment used for preparation and conditioning: The Provenzano plant, recently built in the Terranova district, is at the forefront of its field. It is an example of how hard work, skill and honesty of the products used can give results that are an example in an area where entrepreneurship is lacking and unemployment is very high. Even the Galati dairy, although of a much smaller size, is an example of competent industriousness and has reached moderate levels by equipping itself with modern equipment suitable for its level of production.
Description of the processing, storage and maturing rooms: The production rooms of the Provenzano and Galati dairies are characterized by great brightness, good ventilation, and above all by impeccable cleanliness and hygiene.
