Brief description of the product: Elongated sub-cylindrical fruit with a smooth and regular surface, asymmetrical in shape towards the peduncles (of medium length) due to the presence of a raised lobe. Citrine yellow or creamy yellow skin, shiny with rusty pinpoint spots, very white semi-crunchy pulp low in juice with a pleasant and acidulous taste, light and delicate aroma. Medium size (60-100 gr.) Description of the processing and maturing methods: The fruit is harvested not fully ripe in mid - late October. Complete maturation in the loft by November-December. It can be kept until April.
Specific materials and equipment used for preparation and conditioning: In the warehouse the calibration and arrangement in wooden boxes is carried out (manually), protecting the fruit with strips of white paper.
Description of the processing, storage and maturing rooms: In stock in the high mountains (now also in refrigerators). The warehouses consist of uncooked rural buildings with lava stone blocks of different shapes placed with craftsmanship, the walls are not plastered.
