Brief description of the product: Pear jam with a local variety, with a red face and a long stalk, used only if boiled or in jam because it has a sour and very astringent taste.
Description of the processing and maturing methods: Cooking the pears, removing the peel and cores, extracting the pulp or cutting them into pieces, cooking with the addition of water and sugar in the right doses, storage in glass containers, boiling (pasteurization) and cooling.
Specific materials and equipment used for preparation and conditioning: Steel pots, mincer, knives, work surface.
Description of the processing, storage and maturing rooms: Hygienic-sanitary laboratory.
Elements that prove that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: Secular tradition.
