Production area: Aidone

Typical Sicilian dish, very poor and simple to prepare directly from the wheat. It was used in place of bread and pasta, made by crushing the grain with 2 stones and boiled in salted water to form a puree that was seasoned with oil, salt, pepper and sometimes with wild fennel.

Territory interested in production: Aidone.

Brief description of the product: Wheat puree dressed with extra virgin olive oil.

Description of the processing and maturing methods: Crush the wheat to remove the first sheet and then cook.

Specific materials and equipment used for preparation and conditioning: Two lava stones were used to clean the grain.

Description of the processing, storage and maturing rooms: Premises usually used for family cooking, it represents the first course on holidays.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: The ancient history of this recipe is supported by the testimony of a sample of 10 seniors over the age of 60.
