Area of production: Ustica Island.
Brief description of the product: Dried grains of the lentil plant (Lens Culinaris Medik) subspecies microsperm.
Description of the processing and maturing methods: Beating of the dry plant in the threshing floor and subsequent "spagliata" in the wind. Selection and sorting with special sieves. Storage in warehouse in bags of about 50 kg.
Specific materials and equipment used for preparation and conditioning: Circular sieves in perforated leather suspended from a tripod. Tridents and wooden shovels.
Description of the processing, storage and maturing rooms: The dry and selected product in the farmyard is stored in rural houses and farm buildings.
Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: The Ustica lentil has been cultivated since 1800. The processing methods have remained unchanged as per direct evidence.
