Area of ​​production: Fishing area: Southern Tyrrhenian Sea, Northern Tunisia, Gulf of Hammamet, Island of Malta, Southern Sicily, Western Ionian Sea, Eastern Ionian Sea, Southern Ionian Sea. Brief description of the product: Crustaceans of the species Aristaeomorpha foliacea they live on sandy and / or muddy bottoms, they are caught between 250 and 750 m. It is a large shrimp characterized by sexual dimorphism: males can reach 17 cm in total length and are equipped with a small rostrum. Females can exceed 22 cm in total length and have the longest rostrum. In both sexes the ventral area of ​​the rostrum is smooth, the carapece is robust but flexible, dark red in color; the meat has a white-pink color and a firm and compact consistency; the smell is fresh, of seaweed and slightly sweet.

Description of the processing and maturing methods: Fishing is practiced by fishing boats

 

with trawl nets, the fishery product is immersed in a solution consisting of water and additives allowed by the EU, then placed in plastic trays, divided by size.

It can be frozen on board in forced ventilation at temperatures between -30 and -35 ° C; the trays are placed in a special envelope and labeled. These packages are in turn placed in cartons which are labeled and stored at temperatures below -18 ° C in cold storage on the vessel.

The red shrimp can be sold fresh and kept refrigerated with temperatures close to that of melting ice.

Specific materials and equipment used for preparation and conditioning: Plastic trays, forced ventilation freezing cells; ice in which to store the fresh product.

Description of the processing, storage and maturing rooms: These are refrigerated vessels and motor trawlers dedicated to coastal fishing and approved establishments.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: At the beginning of the twentieth century some fishermen with the first sailboats emigrated to America to make their fortune and, returning to Mazara del Vallo in the thirties, they bought the first motor boats. This was followed by the construction of the first offshore fishing boats, first in wood and then in steel and the same fishing traditions and techniques are still preserved today.
