Brief description of the product: Fava beans cooked and seasoned.

Description of the processing and maturing methods: Put the whole dried broad beans in water for a whole night. Drain and cook in water with onion and celery and add salt when cooked; drain and sauté them in a pan with a garlic sauce, a little wild oregano tomato sauce and dry or fresh red chilli pepper.

Description of the processing, storage and maturing rooms: Suitable domestic environments or kitchens of taverns and / or restaurants.

In Buccheri this dish, from ancient times, is consumed mainly in winter. The elders say that this dish was particularly appreciated because it remained "al dente", and even so it is described in the recipe book of the local tavern of the Formica brothers.
