Brief description of the product: It is a local ecotype which, thanks to the particular environmental conditions enhanced by the irrigation intervention, has particular characteristics of flavor and taste unrepeatable in other areas. It can be consumed both fresh and as a dry legume for the preparation of typical soups.

Description of the processing and maturing methods: The cultivation of this vegetable is carried out in the open field and with organic farming methods. The preparation of the seedbed is followed by sowing and irrigation at intervals of about 4-6 days. About 30 days after sowing, supports are made with wooden stakes in order to allow the crop to be adequately supported during its vegetative-productive cycle. Part of the production is harvested as a legume in pods to be consumed fresh, while the remainder is destined for the production (after natural drying) of dried legumes to be consumed throughout the winter and spring season.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: From the local historiography it emerges that this cultivation has been practiced for centuries according to a rather homogeneous and traditional cultivation method.
