Brief description of the product: Dried tomato juice on wooden shelves exposed to the sun, with the addition of table salt. Ingredients: 10 Kg. Of tomato, 100 gr. of salt.

Description of the processing and maturing methods: Shred and wash the tomato.

Specific materials and equipment used for preparation and conditioning: In the warehouse, the calibration and arrangement in wooden boxes is carried out manually, protecting the fruit with strips of white paper.

Description of the processing, storage and maturing rooms: Rural houses with Sicilian tiles roofing that allows constant ventilation.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: Annals of the Royal Experimental Station of Acireale - Volume XVI - year 1941.
