Area of ​​production: Calascibetta.

Brief description of the product: Christmas sweets made with flour, almonds and dried figs.

Description of the processing and maturing methods: Puff pastry: flour, lard, sugar. Filling: ground dried figs, toasted almonds, sugar, cinnamon, carnation. Crescent shape through "piduzzu". Specific materials and equipment used for preparation and conditioning: Pastry board, knife, “piduzzu” (iron with rounded base). Mainly hand made. Wood oven.

Description of the processing, storage and maturing rooms: Pastry laboratories equipped according to the sanitary regulations in force.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: Use of typical local products of the earth, handed down from family to family for many generations. Cuffitedda is still offered today as a typical Christmas dessert.
