Brief description of the product: Cake filled with dried figs, dried fruit, cinnamon, orange peel and honey, packaged in the shape of a bow.

Description of the processing and maturing methods: Processing of durum wheat semolina with sugar and lard for the formation of the thin sheet of dough which is cut into squares of about 10 cm.

Preparation of the filling with dried figs, almonds, and chopped walnuts, orange peel and cinnamon mixed with honey. After forming spolette, they are placed in the center of the squares of pastry, covered with the dough, shaped and pinched with the fingers to close the ends. Then they are put in the oven.

Specific materials and equipment used for preparation and conditioning: Kneader, refiner, sheeter, marble leveler, oven.

Description of the processing, storage and maturing rooms: Pastry laboratories equipped according to the sanitary regulations in force.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: The current owner of the Corsino pastry shop (fifth generation of the family who started the confectionery business in 1889) continues to offer this dessert that her grandmother had customized by packaging it in the shape of a bow. The same cake is in fact more commonly found in the shape of a tube: so in Palazzolo Acreide with the name of each (which seems to derive from ciascu, that is, fiasco, container), and in the nearby town of Buscemi where it is called saschitedda or sciaschitedda, and Modica where it is called mucatuli, instead in Palermo nucatuli.
