Brief description of the product: Annual spontaneous herbaceous plant of the brassicaceae family, glabrous; stem 3 to 6 dm high, erect, branchy. Lyrate basal leaves with sub-round apical segment (diam. 2-5 cm) and 1-3 pairs of lateral segments; completely amplessicauli (1-2 x 5-8 cm) lanceolate cauline leaves, sub-integer. Short and umbrella-shaped flowering raceme; the open flowers are interspersed with the buds and protrude above them. At the fructification elongated raceme 2-4 dm; patent sepals 3 mm; petals 2,5 x 7 mm; external stamens ¼ shorter than the internal ones; silique 1,5-2 x 40-60 mm with 4-10 mm beak and 8-15 mm peduncle.
Description of the processing and maturing methods: Edible plant, with a pleasantly bitter taste. It is eaten cooked, simply boiled and seasoned with oil, or sautéed in a pan with garlic and chilli or stewed with wine.

Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: It is a custom, in the countries of western Sicily and in many areas of the island, the consumption of spontaneous vegetables for food use. This tradition dates back to the past of subsistence economies, when spontaneous plants were fully included in the diet of the rural people. The use of spontaneous plants represented a common good that was not to be shared with the landowners or landowners and anyone could collect them for their own food needs. Furthermore, the Mayor of Castellammmare del Golfo declares that the consumption of "Cavuliceddri" has been part of the food tradition and diet of families for well over 25 years, especially near and during the winter holidays.
