Brief description of the product: Prickly pears with yellow fruit that ripen at the turn of the month of November.
Description of the processing and maturing methods: The Bastarduna di Calatafimi prickly pear is a very rustic plant that requires little cultural care. In intensive plantations, very fertile soils are used, resorting to two annual irrigations during the summer period. In addition to this, the scottolatura technique is carried out which consists in removing the flowers in the period between June 13th. The plant then emits new flowers, which produce fruits which ripen in November.
Fruits of great value, rich in pulp with the presence of very few seeds.
Specific materials and equipment used for preparation and conditioning: wicker baskets. Description of the processing, storage and maturing rooms: The processing and packaging rooms must be healthy and hygienically acceptable.
Elements proving that the methodologies have been practiced in a homogeneous way and according to traditional rules for a period of not less than 25 years: Bastarduna di Calatafimi is a fruit whose origins lead us to the period prior to the Garibaldi epic. In fact, in the period of the famous battle of May 15, 1860, the countryside surrounding the old village was already cultivated with "Bastarduna di Calatafimi".
